rim and tire sizes

  An 18 mm offset sounds about right (you might get away with 22 mm or
so in the front). A 26 mm offset is really the most you can go without
rolling fender. That's good for a 215/50/15 tire.

I imagine so.

Rear fenders would run into clearance issues first. But I have no
experience with fender rolling. Sorry.
