Are there any recommendations on 'must-have' manuals/texts fora 95 200sx se-r?

The OEM Nissan Service Manual has information about *everything*.
However, it is written for mechanics, so it might be a little overwhelming
for novice wrenchers. There are plenty of detailed drawings, but
sometimes it can be hard to tell what you're looking at exactly.

The Haynes manual sold at most auto parts retailers is easier to read,
with step by step procedures accompanied by actual photos. This is a
good place to start if you are a novice wrencher.
