Master cylinder replacement.

I'll be swapping my MC for an Altima unit. My FSM says to fill the new 
MC with brake fluid and pump the brake to remove air bubles while 
holding your fingers over the four output ports to prevent air from 
entering back into the MC. This seems odd to me, wouldn't that just 
squirt fluid everywhere when you press the brake pedal down?

How have others done this?
